Each bar shows the typical growing altitude on a shared scale from 800 to 2,400 m above sea level. At higher altitude the bean ripens more slowly and tends to give more acidity and sweetness. Values are approximate and vary from farm to farm.

VariedadesVarieties
Coffee leaf rust is a fungus that attacks the leaves. After the 2008 to 2011 epidemic, many Colombian farms replanted with resistant varieties developed by Cenicafé, the coffee growers' research center.

ProcesoProcess
Colombia harvests coffee almost all year round, because each region has its own flowering calendar. These are the steps of wet processing, the most widely used in the country.
-
Only the red cherries are cut by hand. Cherries on one branch ripen on different days, so pickers pass several times.
-
DespulpadoPulping
The skin is removed, leaving the bean covered in mucilage, a sticky, sweet layer.
-
The mucilage breaks down in a tank for roughly 12 to 24 hours, depending on climate and altitude.
-
LavadoWashing
Clean water removes the remaining mucilage and leaves the bean ready to dry.
-
SecadoDrying
In the sun or in mechanical dryers, until humidity reaches 10 to 12%. The bean stays inside its parchment.
-
TrillaMilling
The parchment is removed and the green bean appears, the one that gets exported.
-
Beans are sorted by size. Supremo is screen 17 or larger, and Excelso runs from screen 14 to 16. Defects are also removed.
-
A light roast brings out acidity and floral notes. A darker one gives body and chocolate flavor.
Tres procesos, tres saboresThree processes, three flavors
LavadoWashed
The most common in Colombia. It gives a clean cup with crisp acidity and clear notes of the variety and altitude.
Honey
Part of the mucilage dries with the bean. It gains sweetness and body, with a rounder acidity.
Natural
The cherry dries whole. The cup is fruitier and more intense, with a less clean, more expressive character.
